Lemon Blueberry Protein Balls

Lemon Blueberry Protein Balls

  • Food Processor


  • 1 cup raw cashews
  • 1/2 cup unsweetened, shredded coconut
  • 1 tbsp oats
  • 1/4 cup chia seeds
  • 1 tbsp maple syrup
  • 1 tbsp lemon zest (from approx. 1 lemon)
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 tsp salt
  • 1 cup freeze-dried blueberries


  • Blend cashews, shredded coconut and oats in a food processor until roughly chopped.
  • Add the remaining ingredients (chia seeds, maple syrup, lemon zest and juice, vanilla extract, almond extract, and salt) to the food processor. Blend/pulse until all the ingredients are combined and a sticky mixture forms. Add in the blueberries and pulse a few times (don’t overblend so you can still see pieces of blueberry).
  • Use a tablespoon and roll the mixture with the palm of your hands to form balls. Store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
